If I’m being completely honest, I have never been an egg bake person. I remember having Easter breakfast at church every year growing up and they always had egg bake. I think it was made with pieces of bread and it had the weirdest texture. But as I was going through my freezer recently and found some hashbrown patties that I needed to use, I decided to make an egg bake with the hashbrown patties as the base. Holy yum! This will for sure be one of my new breakfast meal prep staples. I made one half for myself with bacon, cheese, peppers and onions, and one half for my picky eater fiancé with just bacon and cheese and you can’t go wrong either way.

Ingredients

  • 2 hashbrown patties 
  • 3 eggs
  • 1/4 cup egg whites
  • 1 Tbsp milk 
  • 1/4 cup bacon bits
  • 1/4 cup cheddar cheese 
  • 1/4 cup diced peppers 
  • Salt, pepper & garlic powder to taste 
Instructions

Preheat oven to 350°.
Grease small baking dish. 
Place the hashbrown patties in the dish.
In a bowl, whisk together eggs, egg whites, milk, bacon bits, cheese, peppers, and seasonings. 
Pour over hashbrowns.
Cover with foil and bake for 20 minutes.
Remove foil and bake for another 10 minutes or until set.
