Balsamic Glazed Carrots

This is one of my simplest recipes, great for a weekend snack or side dish for a dinner party. It's very easy to make and stores well in the fridge for a few days - just make sure to heat it up again before eating! It tastes much better this way. I love making this recipe in the fall, the colors, flavors and texture just scream fall to me and it really puts me in the mood. The balsamic flavor really infuses the carrots with an incredible aroma. You can store this dish in the fridge in an airtight container for up to four days.

Ingredients

  • 6 medium sized carrots
  • 2.5 tbsp balsamic vinegar
  • 1.5 tbsp raw honey
  • 1 tbsp olive oil
  • 1/4 tsp chili flakes
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 4 sprigs fresh oregano
Instructions

Preheat the oven to 180 degrees Celsius and prepare a shallow oven dish.
Thoroughly wash the carrots (leave the peel on) and place them in the dish.
In a small bowl, mix together vinegar, honey, oil, chili, salt and pepper.
Pour the mixture over the carrots. You can use a basting brush to make sure all sides of the carrots have been covered.
Place oregano on top.
Once the oven has preheated, place dish in the oven and let cook for 40 minutes, the carrots should be crisping on the outside.
