A creamy, tropical twist on the classic mojito flavor, my Coconut Mojito with Coconut Milk is smooth, refreshing, and packed with coconut and lime. Malibu rum brings a touch of sweetness, while fresh mint and club soda keep it crisp and light. The addition of coconut milk gives this cocktail a silky texture, making it a perfect summer drink or a vacation-inspired treat at home.

While traditional mojitos are fantastic on their own, this version with creamy coconut milk, is a fun twist for a cool drink for a new summery cocktail. Pool days, backyard gatherings, or anytime you’re craving a tropical escape, this refreshing cocktail is smooth, slightly sweet, and effortlessly cool.

This cocktail was inspired by my love for a cold, flavorful, tropical drink, to sip on in the warm sunshine. I need to make and share more with you. But in the meantime, here are some of my favorite cocktails: Love Potion Cocktail, Peppermint Espresso Martini, Baileys Vanilla Mint Shake, Hennessy Strawberry Lemonade and Apple Cider Sangria.

  • Coconut Rum: For a plain mojito, use light rum, also known as white or silver rum. If you are looking for a substitute the coconut rum, you can add ½ teaspoon coconut extract with it.
  • Hold the Rum: This recipe still has so much flavor that if you want to make it non-alcoholic, you can make yourself a delicious coconut mojito mocktail.
  • Granulated Sugar: To sweeten this cocktail, you can swap regular sugar for brown sugar, superfine sugar, cane sugar, honey or simple syrup work well. These all also work well for the sugar rim if you choose to rim your glass.
  • Coconut Milk: For a richer, thicker texture swap the coconut milk for coconut cream.
  • Club Soda: Try any type of sparkling water instead of club soda. And if you do not want the carbonation, you can use coconut water.
  • Fresh Mint Leaves: Mix it up with basil for a unique twist.

If rimming your glass, run a lime wedge along the outside rim of the glass. Sprinkle a little sugar and lime zest to a shallow plate and dip wet rim to coat.

To your glass, add sugar, salt, half a lime, and 3-5 mint leaves and then use a cocktail muddler or the end of a wooden spoon to muddle the ingredients together with firm but not intense pressure.

Place some ice to the glass then pour rum and coconut milk in. Stir well to incorporate sugary mixture then top with as much club soda as desired.

Garnish with a fresh mint sprig and enjoy.

Hint: Use a balanced pressure when muddling. Push hard enough to release juice and oil, but too hard can release bitterness from the lime peel.
