Mini Apple Pies

Are you guys tired of my apple related posts yet? I think I’ve covered most of the recipes I wanted to try out but let me know if there were any others that you would like me to do! I decided to bake some mini apple pies that were made in muffin tins. They’re a great way to take a single serving pie to-go, or to serve to others. These low in sugar pies were made with NOW Foods Better Stevia with Monk Fruit drops, which was a great sweetener alternative! But if you do not have monk fruit sweetener at home, regular sugar will work just as well. Check out the recipe below!

Ingredients
- Any homemade or store bought pie dough (check out my blog for a great pie crust recipe)
- 2-3 apples (if they are small, use 3)
- 5-10 drops NOW Foods Better Stevia with Monk Fruit or 2 tbsp of sugar
- 1 tsp ground cinnamon
- 1/8 tsp nutmeg
- 2 tbsp cold butter or vegan butter
Instructions
- Preheat oven to 400°F (or 200°C) and grease 6-8 rounds in a muffin tin.
- Roll out your pie dough and cut with a big cup or large round cookie cutter into circles. They should fit snug in the base of the muffin tin and wrap around.
- Peel, core and chop apples into small cubes. Add in NOW Foods Better Stevia with Monk Fruit. You can adjust the number of drops based on how sweet you want the apples. Mix cinnamon and nutmeg in a bowl and toss on apples until coated.
- Fill the pie dough with apples. Add about 1 teaspoon each of butter or vegan butter in the middle of each pie. **If you want to make a lattice pie crust, make sure to save extra dough and cut into thin slices, then add to the top.**
- Bake for 25-30 minutes or until pie crusts are golden brown on the bottom.
