We all know that eggs are a great source of protein and they’re so many different ways. You can make them that you really cannot get sick of them. I’m always trying to find ways to add more protein into my diet and keep it low-carb and this seemed like a no-brainer for me.

The addition of Greek yogurt, instead of mayonnaise amps up the protein in these deviled eggs, they’re the perfect snack or addition to a salad and obviously fantastic for breakfast

This recipe is for two eggs, you’ll end up with four halves. Slice your hard boiled eggs, the long way in half.

Scoop out the yolks and put them in a bowl

Add 1 teaspoon of yellow mustard to the bowl

add in one heaping tablespoon of plain Greek yogurt

I had a tiny squeeze of lemon juice, if you do not like lemon, it’s perfectly fine to omit

Salt to taste

And pepper to taste

Mash that all up in a bowl until it is smooth and creamy

Divide the mixture amongst your four halves and add a dash of paprika I liked the smoked variety for its flavor
