Ingredients

  • 8 rice paper wrappers
  • ½ cup vermicelli noodles, cooked
  • 10-12 shrimp, cooked and sliced in half lengthwise
  • 1 cup lettuce, chopped
  • ½ cup mushrooms, thinly sliced
  • ¼ cup peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tsp maple syrup or honey
  • 1 tsp rice vinegar
  • 2 tbsp warm water (to thin the sauce)
Instructions

Cook the vermicelli noodles according to package instructions, then drain and set aside.
Slice the cooked shrimp in half lengthwise and prepare the lettuce and mushrooms.
In a small bowl, whisk together peanut butter, soy sauce, hoisin sauce, maple syrup, rice vinegar, and warm water until smooth. Set aside.
Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for 5-10 seconds until it softens.
Place the wrapper on a clean surface and layer lettuce, vermicelli noodles, mushrooms, and shrimp in the center. Fold the sides inward, then roll tightly from the bottom up to seal. Repeat with the remaining wrappers.
Serve the rolls with peanut sauce on the side for dipping. Enjoy!
