Guacamole Chicken Sandwich

Keeping it all healthy and using healthy fats for this sandwich. It was truly yummy. I highly recommend making this recipe. I loved the flavour and texture of this sandwich. I was able to mix it together in only a few minutes to satisfy a quick and easy lunch hour at home. I keep all of these ingredients on hand all the time, including shredded chicken. I always have a package of Maple Leaf natural shredded chicken, but you could use a grocery store rotisserie chicken too. All you have to do is shred it and add to the guacamole mixture.

Ingredients
- 1 ripe avocado mashed
- 2 tsp diced red onion
- 3 grape tomatoes in quarters
- Lime juice (half)
- 1 garlic clove minced
- 1/2 tsp chilli powder
- 1/4 tsp cumin
- Dash chipotle Tabasco
- Pinch salt
- 1/2 cup shredded chicken breast
- Pinch of arugula microgreens
- Drizzle of chipotle aioli
- 2 slices sourdough bread
Instructions
- Mix together the first 10 ingredients.
- Toast bread.
- Drizzle on chipotle aioli
- Spread mixture on the toast, add microgreens, and serve.
