Homemade Chicken Nuggets

I always used to buy the $6 Trader Joes chicken nuggets pack until I thought to myself - I can make that myself! I love making foods myself because I can control how much sodium and other additives are inside. I make a huge batch of these chicken nuggets once a month and use it in salads, snacks, etc. My toddler eats these almost daily and I often will sneak vegetables such as zucchini, broccoli, or carrots in the mixture. I guarantee you cannot tell. This recipe is very forgiving, I always eyeball my ingredients but for the sake of this recipe I will put exact measurements.

Ingredients
Homemade Chicken Nuggets
  • 1 lb ground chicken
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp Italian seasoning
  • 2 tsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
Chicken Nuggets Breading
  • 3/4 cup breadcrumbs
  • 1 tbsp garlic powder
  • 1 tsp paprika
  • 2 tbsp nutritional yeast (optional)
Instructions
Homemade Chicken Nuggets
In a large mixing bowl, combine ground chicken, egg, and spices
Put parchment paper on a baking pan spray with non-stick spray
Using a cookie scoop, scoop the chicken nugget mixture and place on sprayed baking pan. Using back of the scoop, create a "nugget" shape by gently smashing
Place nuggets in freezer for 1 hour
On a plate, mix breadcrumbs and spices evenly
Preheat oven to 425
Roll frozen chicken nuggets in breadcrumb/spice mixture evenly (if it does not stick, dip in egg first then breadcrumb mixture)
Place chicken nuggets on baking pan and bake for about 20 minutes. Spray with avocado oil spray to crisp it
Tips
  • Nutritional yeast is optional, but I like to add it because it adds a "cheesy" flavor and in 1 tbsp is 100% daily B12
