One of my husband's favorite foods is pickles so we almost always have a jar of pickles in our fridge. I had ingredients for an egg salad so I made this recipe up on the spot. It turned out delicious and it was a great recipe for a meal prep! I used it on top of toast, salad, etc. There are a lot of dishes that you could use this in.

Ingredients
High Protein Dill Pickle Egg Salad
  • 6 hard boiled eggs, chopped
  • 1/4 cup cottage cheese
  • 1/2 cup Greek yogurt
  • 1 tbsp dijon mustard
  • 1/4 cup pickle juice
  • 2 tbsp dill
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 pickle finely chopped
  • 2 celery sticks finely chopped

In a large mixing bowl, combine all ingredients until evenly incorporated
