2 Ingredient Watermelon Popsicles

It has been a hot and humid summer so we have been eating a lot of these popsicles with all the outside time! I bought a pack of "organic" popsicles recently and was surprised to find that the ingredients were not that impressive. I thought to myself, "I can make that taste better while using whole food ingredients" and so I did. Who doesn't love watermelon?? Especially in the summer. This recipe was very easy but did take a little bit of prep. I bought disposable popsicle molds off Amazon and made a big batch of popsicles for my toddler to eat after we are done playing outside. They are a big hit for kids and adults!

Watermelon on right

(I also used part of watermelon juice to mix with coconut water for a fun cocktail using the juice!)

Ingredients
2 Ingredient Watermelon Popsicles
  • 1 watermelon
  • 1 tbsp lime juice
Instructions
2 Ingredient Watermelon Popsicles
Start by cutting up a watermelon to bite size pieces
Add cut watermelon to blender with 1 tbsp lime juice
Place strainer on top of large mason jar or bowl and pour blended watermelon through strainer into jar/bowl
Using a funnel, pour strained watermelon juice into popsicle molds and place in freezer
Tips
  • Watermelon is naturally sweet so I used lime juice to cut the sweetness and for preservation reasons
  • This is also delicious if you mix pineapple with the watermelon or strawberry, feel free to experiment!
