- • 4 crumpets
- • 2 eggs
- • ½ cup milk (or plant-based alternative)
- • 1 tbsp sugar (optional)
- • ½ tsp vanilla extract
- • ½ tsp cinnamon (optional)
- • 1 tbsp butter (for frying)
- • 2 tbsp peanut butter (smooth or crunchy)
- • 1 banana, sliced
- • ¼ cup chocolate chips or melted chocolate
- • 1 tbsp maple syrup or honey
Instructions
- In a shallow bowl, whisk together eggs, milk, sugar, vanilla extract, and cinnamon.
- Dip each crumpet into the egg mixture, ensuring they soak up the batter for about 20–30 seconds per side. Let any excess drip off.
- Heat butter in a frying pan over medium heat. Place the soaked crumpets in the pan and cook for 2–3 minutes per side, until golden brown and slightly crisp.
- Spread a generous layer of peanut butter over the warm crumpets. Top with sliced bananas and drizzle with melted chocolate and maple syrup or honey.
- Sprinkle with powdered sugar for an extra touch of sweetness. Serve immediately while warm.
