Crumpet French Toast With Banana, Chocolate and Peanuts

In the UK, we love crumpets! If you don’t have it where you are, then the best way to describe is as a round bread with loads of holes in it - like a sponge almost. So obviously, as a sponge, it is perfect for soaking up the liquid for French toast and makes an ultra luxurious breakfast. Paired here with banana, chocolate, peanut butter and Greek yoghurt - a classic combo! You can also just use any bread instead of crumpets if you can’t find them where you are.
Top top: make sure you let the crumpets or other bread sit in the mixture for a good amount of time, to ensure it soaks it up well.
Crumpet French Toast With Banana, Chocolate and Peanuts

Ingredients
- 4 crumpets
- 1 egg
- 1/2 CUP milk (any kind)
- 1 TSP honey
- 1 TBSP peanut butter
- 1 banana, sliced
- Chocolate sauce (for drizzle)
- Handful of salted peanuts (optional)
Instructions
- Place a nonstick pan over a medium heat, and add either a little butter or a neutral oil.
- In a shallow bowl, Break the eggs and mix together with milk and honey until we’ll combined. Take 1 or 2 crumpets (depends what fits) and soak in the bowl for 30 seconds on each side.
- Transfer the soaked crumpet to the frying pan, and cook on both sides until golden. Repeat the same process of soaking and frying with the rest of the ingredients.
- To serve, pile the crumpets onto a plate and pile up with Greek yoghurt, and the banana slices. Drizzle over the chocolate and peanut butter, then add some more peanuts if desired.
- Serve immediately.

Can we say drooling 🤤! This looks so good. We have crumpets in Australia. I may have to splurge on Christmas morning for breakfast.
I normally just have crumpet with lots of butter and sometimes strawberry jam. This may be my new favourite 😍.
