Easy French Toast Casserole Recipe

This French toast casserole is easy to prepare. You can make it the night before and let it sit overnight for a delicious breakfast the next morning.
I use my real vanilla extract, and it's so delicious.
I actually used leftover hot dog buns to make this casserole! You can use pretty much any bread. When there are a few pieces of bread or a buns that are getting hard but still good, I freeze them to make this casserole.
We usually have this for breakfast for dinner and not in the mornings. I make bacon or sausage and a big pan of scrambled eggs to go with it.
My kids love this, and it's a quick and easy breakfast or dinner. It's also really cheap, especially if you freeze bread like I do.

Ingredients
- 1 cup brown sugar
- 1/2 cup real butter
- 8 ounces bread
- 2 cups milk
- 6 eggs
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
Instructions
- Grease a 9x13 pan.
- Melt the butter over medium low heat in a saucepan. Add 1 cup brown sugar and stir until dissolved. Pour into the greased pan.
- Tear bread into 2 inch cubes. Place in pan evenly about 2 inches thick.
- Beat eggs, milk, and vanilla extract in a bowl. Pour over the bread. Use a spoon or your fingers to ensure that all of the bread is coated evenly. Sprinkle cinnamon on top.
- Cover and place in the fridge for several hours. You can also leave it in the fridge overnight.
- Bake at 450 degrees F for 15 minutes. Reduce heat to 350 F and bake an additional 30 minutes.
