Strawberry Squares
I’m a huge fan of anything shortbread and with a buttery crust, these strawberry squares not only deliver on the crust but the sweet jam in the middle and crumbly buttery top puts them over the edge, and if that’s not enough deliciousness for you, there’s a sweet drizzle all over the top!
this recipe is for an 8 x 8 pan, but you are definitely going to want to double this recipe once you try them!
Start by preheating your oven to 350° and lining an 8 x 8 baking pan with parchment paper
Please, two sticks of butter in a mixing bowl and bring to room temperature
In a separate mixing bowl, add 2 1/4 cups of flour, One cup of sugar, And 1 teaspoon of salt, then whisk that all together
Add the room, temperature, butter, one egg, and 1 teaspoon of vanilla extract to the flower mixture
Mix all that together with a pastry cutter until it is a fine crumbly consistency
Press, 1/2 of the mixture on the bottom of the pan and flatten out with your hands
I used strawberry Preserves that I had on hand, You can use your favorite in this recipe and it doesn’t have to be strawberry. These are great with blueberry and pineapple preserves also.!
Spread 3/4 of a cup of the preserves over the crust in an even layer
With your hands, crumble the remaining dough over the preserves
Oven ready! Bake for 40 minutes until lightly browned
While the bars are baking, make the glaze, Place one cup of powdered sugar, and 2 tablespoons of heavy cream into a small mixing bowl
Mix together thoroughly until there are no lumps
Remove the bars from the oven and cool completely before frosting
With the spatula placed the glaze into a plastic baggie and with your hands work the mixture all the way to one corner of the bag

Snip off a tiny end of the bag
Drizzle the frosting over the cooled bars and let them sit for a few minutes for the frosting to set up then cut into squares

For the bars

- 1 teaspoon salt
- One cup of butter at room temperature
- One egg
- 3/4 of a cup strawberry jam
For the glaze
- One cup of powdered sugar
- 2 tablespoons heavy cream
Instructions
To make the squares
- Preheat oven to 350
- Line an 8 x 8 baking dish with parchment paper
- Mix together the flower sugar and salt in a mixing bowl
- To that mixture, add the room, temperature butter, and one egg
- With a pastry cutter mix that altogether until it is fine and crumbly
- Half of the mixture into the prepared pan
- Spread the preserves over the crust
- With your fingers crumble The remaining mixture over The preserves
- Bake for 40 minutes until lightly golden Brown
To make the glaze
- Place the powdered sugar and heavy cream in a small mixing bowl and mixed that really until there are no lumps left
- With a spatula place the mixture into a small plastic bag and snip off one and
- Drizzle over completely cooled bars
Tips
- If you don’t have heavy cream, half-and-half works well, as well as some flavored coffee creamers, I have found
