Sweet Potato Breakfast Bowl

Breakfast is the most important meal of the day they say, I personally love breakfast but like a variety of things to have because having the same old thing every day can get old and boring and in turn, make you not enjoy it.

Any kind of Breakfast bowl is my favorite and this one is made with sweet potato as one of the ingredients and not only are sweet potatoes full of potassium and fiber, their slight sweetness pairs nicely with the other ingredients in this bowl.

Are usually buy one sweet potato a week, I look for a longer variety because I will split this three ways and use this for three bowls. Wash and dry the potato and cut off the ends.

With a sharp knife, make six approximately half inch piercings in the potato three on one side and three on the other, we will be microwaving the potato and this will allow the heat to escape and the potato won’t explode in the microwave

This is just a close-up of what the piercing should look like nothing huge just a quick little stab of the knife, but not all the way through the potato

Microwave times will vary, but I placed mine on a paper towel and I microwave for one minute then I turned it over and microwave for one minute again until it’s soft

When the potato is cool, I cut into three sections. We’ll use one piece and I place the others in a ziplock bag in the fridge for later use

I take one section of the potato cut it in half and placed it in a bowl. Sprinkle it with cinnamon.

Add a tablespoon of nut butter of your choice I like to use almond butter

I like apple with the sweet potato, but any fruit that you enjoy will work, I dice 1/4 of an apple for this

Cottage cheese is my go to for this bowl, but you can also use yogurt. I will use 3/4 of a cup.

A sprinkle of your favorite granola or nut mix will top off this bowl for a delicious and nutritious breakfast!

For the bowl
  • 1/3 of a large, sweet potato cooked and coooled
  • 1 tablespoon almond butter
  • 3/4 of a cup cottage cheese
  • 1/4 of a green apple diced
  • Sprinkle of cinnamon
  • 1/4 of a cup granola or nut mix
Instructions

Layer all ingredients in a bowl I like to start with the potato on the bottom, cinnamon, nut butter, cottage cheese And then granola
